The first Dogfish 90 min IPA clone came in around 8-9% abv. It was as good if not better than the original. The 2nd clone, for some reason came in at 12.1% abv. Now it's really young, so I hope it mellows a bit, (more like quite a bit). But not balanced at all. Over the top alcohol. Might be a pour out and try again. I also got a pale ale in the fermenter, AND it for some reason is coming in with high abv. Not sure whats going on right now. This pale ale was suppose to come in at around 5.2%, I'm estimating a little over 8%. Not sure what I'm doing wrong, my last 6 batches have been spot on. My Chinook IPA will come in a little high, maybe 1/2-3/4% higher than expected, so I'm not real worried about this. It should be drinking next week. I tried one last night, tasted good, just hasn't fully carbonated, probably next week she'll be ready to go. Dry Stout is next! @lozcrappie

WHARFRAT Posted May 3, 2017 Posted May 3, 2017 used 8 oz of cane sugar at start of boil. I really think we didn't have enough water from the mash and sparge. (6.25 gallons) After 90 min of boil, only a bit over 4 gallons. Target was 5 gallons. Starting 1.111, final 1.019. = 12.08% Target was around 9.4% Now the pale ale was an extract kit, which really surprises me that I was off so much. Starting 1.074 final 1.012 = 8.14% The last pale ale was spot on and it was the same kit. The only thing I did different was added .5oz of bitter orange peel and .4oz of coriander around 10 min left in the boil, and I used citra hops in the last edition instead of cascade. This one really has me scratching my head. @lozcrappie
