I’ve never had elderberry jelly, but have had wine made from them. 

Didn’t get gooseberries this year.  Some critter, possibly human, stopped the branches clean one night. There were some broken branches, so it wasn’t birds.

My dad and brother used to make the wine, it’s good stuff, the jelly is awesome, my neighbor made a batch of elderberry syrup and we put that on pancakes and I thought I went to heaven! Lol

       We never have just staying with gooseberry, blackberries and raspberries. Just don't see many elderberries around here like we used to. On year mom made some elderberry jelly but it did not set and we had elderberry syrup and boy howdy like you said it was amazing on pancakes and waffles! 

       Do have a couple gallons of gooseberries in the freezer waiting for the making of jam soon!

It was the weirdest thing. Two gallons of gooseberries—poof!

My wife has made jelly from about everything you can think of.  Blackberry jelly is a staple for us.  Wild grape jelly is terrific.  We are now working on eating a bunch of jars of serviceberry jelly from berries picked out in Montana, and it's terrific.  She made persimmon butter one time and it was wonderful, but tried it two more times since, and apparently got a few not quite ripe enough persimmons in the batch, because the butter turned out to be a little astringent.  She made rose hip jelly one time and it was excellent, but it takes a lot of picking to get enough rose hips.  Made wild cherry jelly several times.  Elderberry a few times when we can find enough.  Same with gooseberries.  I eat a lot of jelly, and it's probably been 35 years since we actually bought jelly.

Not this year, too dry to make a berry crop, but I like jam more than jelly for the raspberries, black berries and straw berries.  My late sister-in-law was a jelly maker, if it had juice she made jelly, she made a lot of jelly out of Kool Aid and some of that Kool Aid jelly tasted just as real as can be.
