Anyone have a semi easy goose or duck recipe? I do marinades and wrap breasts in bacon to grill. And being originally from Louisiana I make duck gumbo. Just interested in something different.

There's always duck McNuggets in mushroom soup over rice.  Cubed nuggets dredged in seasoned flour, fried about half done and then into mushroom soup.  Make some brown and wild rice and put the duck and gravy over the rice.  It is dang good and super easy and the duck stays tender so long as you don't fry it too long.  Hot grease and a quick brown is the ticket.

          I would suggest a quick sear on each side of the skin on duck breast fillets. Eat rare to medium rare. Best over charcoal. I like my goose (Canada) cut thin on the bias and not overcooked for fajitas. I have posted several dishes on this site the cooking thread. May take some time to search but they are all there. Here is one that makes a great appetizer. Take a 8 oz pack of cream cheese and cut it in half and then cut into 1/4 inch thick chunks. Cut the duck into about the same size and place on top of the cream cheese. Put a slice of jalapeno pepper on top of them and then wrap with bacon, about half a slice, and stick a tooth pick through it to hold it together. I put them on the grill or smoker, not directly over the fire if on the grill, and cook until the bacon is done. I don't flip them because the cream cheese fall out. Hope you enjoy.

I usually always go back to the my favorite of Duck Teriyaki. Marinate with Teriyaki or whatever asian sauce you like cook medium rare then remove and cook up a bunch of veggies - onions, broccoli,  peppers, carrots and whatever else you like. 

Time flies like an arrow. Fruit flies like a banana.

Do you have a sous vide? If so, I can suggest several variations you might love.

Rumaki is great. Duck chunk, water chestnut chunk, bacon wrap, teriyaki marinade. Grill or Broil. Let rest 10M. That water chestnut chunk retains allot of heat.

My go to goose recipe is a BBQ pulled goose. 

Saute a yellow onion and some minced garlic, then brown two goose breasts in the same pan. 

Put it all in a crockpot with some Worcestershire and beef broth, cook on high for about 6 hours or until you can pull it apart with forks. 

Toss in BBQ sauce and let it sit in the fridge over night.
