What is the true name for these? 

We use to get them off old dead trees and sometimes on damaged trees. But I no longer find them.

Grandmother always loved them and prefered over Morels. 

Any help appreciated.

                      My guess would be oysters too. Never seen any as big as elephant ears more like a life-sized elf ears :) .

If I ever find them again I will take pictures. Were not oyster mushrooms, I am familiar with them. I may have to have my wife dig out my Mushroom book she boxed up with all edibles and not edibles out there and see if I can find them.

Did they look like these mushrooms?

if so these are dryad saddle or pheasant back mushrooms. I've eaten a couple and these are pretty tasty.

Yep that is the ones.

I looked up the elephant ears and they say poison, in USA. But over in Germany they do eat them with no problems. 

Every body has their own names for some mushrooms.
