I believe that honor actually goes to the Tasmanian giant freshwater crayfish (Astacopsis gouldi). While on the endangered species list, and only found in lower-elevation Tasmania, they have been documented up to 13 lbs and can live 60 years.

Added; The marron is another very large Australian crayfish, reaching 15" / 5lbs.

I can't dance like I used to.

I saw a show where they were poking around trying to find them.  Small streams, but they'd pull out those big old things.  Not easy to find, took them a while to find one.
