4 lbs ground beef or venison
1 lb williams mild sausage
1 large yellow onion chopped
2 heaping tablespoons minced garlic
1/3 cup chili powder
3 cans (16 oz) red beans drained and rinsed
2 cans (14.5 oz)diced tomatoes
1 can (14 oz) beef broth
2 cans (4 oz) diced green chiles
5 beef boullion cubes
3 tsp garlic powder
3 tsp cumin
1 tsp black pepper
Mix the meat with all the dry seasonings. Make it into a big patty and cook on a smoker letting the juices drip into a large dutch oven. When the meat is done mix everything else with it and cook maybe 250 degrees or so on the smoker for two or three hours.
I added a can of original rotel to the recipe above. Like all chili, its better the next day.
My best friend that I used to process all our deer together with up and died on me. I still have the stuff and the know how but find myself lacking the want to. Our local processing plant is working deer just like alwways.

I don't really think of myself as high risk until I realize I'm 68 and that makes me high risk whether I like it or not. Appreciate you understanding. Gonna miss you guys. Sounds like some really good news on the vaccine situation so maybe we can do something in the spring.
You guys may hate me for this but I want to let you know sooner than later. In light of this big virus wave and all the professional advice to stay home, I'm going to wait until I've been vaccinated to be in any large or even largish gatherings. So have fun without me OK?

My neighbor's son in law shot a six point in the neck this morning at an honest 450+ yards. I need to step it off. Remington 700 heavy barrel .308 with target stock and a big danged Zeiss scope. His wife and mother in law watched it happen out the back window of their house. They had texted him to look for the deer. Man what a shot. I don't think it was an accident either. They said the deer dropped and never even moved a hoof. Seeing where it was hit, I believe it.
I wrapped my first canoe - glass square stern thing - around a tree on Center Creek in 1974. Pulled it off with a tractor. It popped back into shape and I repaired it with woven fiberglass and epoxy inside and out. Never a problem with the repair and I used that boat for a lot of years when I was in college and very poor. An aluminum boat would have been toast.
When I was the operations manager, I had a sign in both bathrooms that informed everyone their mother didn't work here and it was their responsibility to clean up after themselves. Didn't work either, dang it.
