  2. Jeff if I remember right his big fryer takes like 7 gallons. I brought two jugs. Don't take that for the gospel. I have slept a couple times since then. If all goes to plan I will bring two dishes. One a bit spicy and one that you can doctor up to your liking. BilletHead.

  9. Me tooo . I have two old tough squirrels in the fridge now. I need to do them and do a mushroom sauce/gravy with some chanterelles. Ground chants. The goose jerky marinade I made this morning called for porcini powder. Instead I ground chanterelle into a powder like I have done before. When I opened the coffee grinder it was a puff of orange fruity smelling smoke . Awesome deal! I could see that incorporated in the braise. BilletHead

  14. I assure you Wrench duck is even better . Another day and I will show you that man. A good braise and the squirrel will fall of the bone. Remember to add some moisture in the form of alcohol, broth or stock when you do that. About half way up the side of the meat. Don't completely cover the meat! BilletHead

    Section of pork loin, Prepared Sous Vide bath at 130 degrees. Sealed loin roast with S&P , thyme, rosemary and sliced garlic in the bag. Dropped in and did not worry about it for three hours. Started coals and banked to one side of the grill with peach wood for the smoke. Opposite side on went the meat after it's bath, Twenty minutes a flip and turn. Then twenty more minutes. A can of bean greens for me and when the Mrs. Gets home she gets the can of peas Moist, smoky and tasty. A drizzle of The BilletHead's BBQ sauce topped it off. BilletHead

  17. Young ones fried up and eaten. Older ones braised like Terrierman said. There are many ways to do that. Glenn Wrench Sims would change his mind pronto. Got to look to other methods. Remember Glenn you did not like goose either , BilletHead

  19. Yep like Wrench said get them wet. I have my own way to do it. In no hurry I hang by one back leg. Cut around each ankle and then a skin cut from foot to foot through the vent. Use fish skinning pliers to grab skin and yank down. Snip off the tail for fly tying or selling to mepps. Everything is done hanging and no hair to speak of. I don't wet mine. Just like case skinning a furbearer. Be sure and get the little lymph nodes in the back legs and front legs. I have now shot over 30 with the PCP. May have to do a step by step on how I do mine. A pair of kitchen shears is a great tool also. BilletHead
  20. Mixed bag is right. Good shopping trip to the outdoor pantry we have been provided. So nice to hunt and put food on the table, Double bonus. I have sliced goose in the cure for jerky and a dehydrator full of hen of the woods dehydrating. Here is to hoping you find some good areas back east too. Excited to see if you can get the deer behind your new abode . BilletHead
