Root Admin Phil Lilley Posted November 19, 2012 Root Admin Posted November 19, 2012 A friend at church says he's been canning... fish, venison, other stuff. I've never done it but am going to try. Starting with trout. Anyone have any home recipes?

Anyone have any home recipes? Well yes they can so long as they have the proper license, I don't think there is a Felon Fishing Rod Rule.
strangercreek Posted November 19, 2012 Posted November 19, 2012 My wife is wanting a pressure cooker for this purpose, we'll see what happens. We can all start canning asian carp, I've heard that it is really good to eat actually, maybe a good way to get rid of them. And of course, yes, anybody "can" fish, in fact I encourage it. All you need is a rod, some line, and the proper license and some bait or flies
BilletHead Posted November 19, 2012 Posted November 19, 2012 No home recipes. Just used the ball canning guide. The trout canned is pretty bland tasting so we did add spices. A touch of liquid smoke did wonders. Hot sauce also. Made trout salad just like tuna salad adding mayo or miracle whip with dill relish. Made fish cakes and fried. Not too bad. Leaving bones, they just pressure cook up. Like Canned salmon. I have always wanted to do some small bluegill whole and eat like sardines but haven't yet. Deer pressure canned is awsome. Just meat, or a stew mix. Done canned chili with deer. Had some of that Saturday evening. Shelf life canned is great. We have eaten three year old canned deer and it was like we did it yesterday. A great way to fill the pantry. Just open and heat up. Made canned chicken soup, with rice, wild rice and even noodles. Anyone have any home recipes? There's a guy I used to go to Canada with that would pickle northern pike and can it. Strangely, the only guy in Missouri that I heard of canning fish was a gigger. I'll try to call the Canada guy and send you his pickling recipe. "Honor is a man's gift to himself" Rob Roy McGregor
gotmuddy Posted November 20, 2012 Posted November 20, 2012 I can trout, and have recently started canning chili. For trout, I put a tablespoon of french dressing in each jar for flavor and in about half the jars I put a squirt of mustard, plus a dash of sea salt. The taste is much like tuna. I usually eat it on crackers. I do pints for 60 min @ 10psi. everything in this post is purely opinion and is said to annoy you.
Chief Grey Bear Posted November 20, 2012 Posted November 20, 2012 Great topic! I am assuming you are not filleting if you are pressure cooking?? So you are canning these trout whole??? I also smoke my trout and also make a "tuna salad" like concoction that I also eat with crackers. Could you smoke your trout and then can them??? BilletHead Posted November 20, 2012 Posted November 20, 2012 Some I have done on the fillet. But most just chunk them up. The bones cook up and have a little crunch and are a good for you. I have never smoked and canned but I suppose you can. Daryk Campbell Sr Posted November 20, 2012 Posted November 20, 2012 Just a thought...... but wouldn't the canned trout, or any fish for that matter count toward your possesion limit? Kinda takes away the benefit if your preparing on storing up for the future. Money is just ink and paper, worthless until it switches hands, and worthless again until the next transaction.
