I bury mine in ice overnight and clean em the next day. So much easier to do a near-perfect job of filleting when they are already dead and the meat is cold and firm.

I ice mine down as well. Really bad karma filleting them out while they're flopping. I guess I'm tender hearted. I'm gonna knock em the head or something before I go to cutting.

Ok James I have to ask. Did you grow up in Florida?

That is a classic way Floridians clean their fish, Makes it much easier and waste very little meat as many of the fish are actually more flaky because of the warm water.

F&F, didn't grow up there but spent four years in Pensacola in the late 1980s. I actually learned the tactic from my grandfather in Arkansas but you are right, lots of folks follow it in Florida. Works really good on triggerfish, red snaps and small grouper.

I'm with you on the Karma thing. If I don't ice I try to brain stab.

Filleting fish at kimberling a few years back, the fish flopped and the knife went through the fish, and through my thumb almost out the other side. Wrapped my hand in the nasty fish/worm rag, and drove to the nearest ER (branson) the Kimberling city urgent care was closed....stuck in traffic on hwy 76 for an hour or so before finally getting several stitches and a tetanus shot. Ever since then I fill my livewell with ice, and they are long frozen before they ever see the knife.

A few years back I did some halibut fishing in Alaska, the guide insisted on getting those Otoliths out of the fish when he was cleaning them.
