When it is nice and cold in a duck blind, the goo gels and you can just flick it out of the can like a booger. I only eat the mini dogs at freezing temps.

Schneider's in Waterloo, IL might be closer than St. Libory. They do make their own smoked snacks (sticks, sausages, jerky, etc), and process deer as well. Brats are made fresh, and have repeatedly won "Best of IL" at the state competitions.

I think Miller's Meat Market in Red Bud has mainly local livestock, though, if you can add another 25 min to the drive. But don't quote me on it.

No human hands unless the butchers lose one chopping up things. Mini dogs are made of the stuff they scoop off the floor in the processing plant and I am sure they use a shovel.
