Terrierman Posted August 19, 2016 Posted August 19, 2016 Having trouble with posting pics. Meat is almost six hours into the cook. Nice color and smells great. I'll last as long as I can and when I get too tired, I'll take it off the egg and load everything in a big roaster, add a quart of vegetable stock, cover it with foil and put in the oven for the rest of the night at 200 F. Pretty sure it will be edible tomorrow. Pasta salad is made. Its big. 24 oz veggie rotini cooked and drained, two zucchini sliced thin, one medium yellow squash, seeded and sliced thin, one medium red onion sliced thin and then quartered, 6 oz pepperoni, 4 oz fresh shredded parmesan, 6 oz pitted greek calamata olives, 4 oz sliced baby portabella mushrooms, roughly a cup of fresh basil chopped, 2 oz balsamic vinegar, 3 oz red wine vinegar, 4 oz decent red wine, 8 cloves fresh garlic, peeled and pressed, two medium tomatoes coarse chopped and two anahiem peppers, seeded and coarse chopped, maybe a tablespoon of Tone's dried Italian seasoning that's mostly oregano. Salt. It's wet and is going to be OK by lunch time tomorrow. Lovey made the cake she promised. It looks good too. Oh and I almost forgot - Arbequina EVOO - maybe 1/3 cup. Got to have that good oil. ness Posted August 19, 2016 Author Posted August 19, 2016 18 hours ago, BilletHead said: Still some cooking going on here in BilletHeadville, Picked some figs off of our fig bush. I say bush because in this climate it freezes back all the way to the ground sometimes. There have been years the shoots survive in mild winters. This past winter it did and I have a bunch of figs. So we bacon wrapped some deer loin. Grilled that and the figs. As far as the figs we sliced them, put the sliced sides down for a short grill. Then turned them over, skin side down. Made a little cup of sorts. The innards would start to bubble and boil. Paired the steak and figs with a baked tater topped with sour cream and chives from the garden. I bet those figs would be good on some vanilla ice cream. Only lost four or so between the grates of the grill. Next time I will use a double sided basket for them, Next thing we tried is some jalapeno corn fritters. Yowzer very nice. Topped them off with some sour cream with cilantro and lime wedges on the side, another keeper. Lastly when we were in Springfield Tuesday Hi-Vee had Hatch chili peppers for a 1.99 a pound. Mild or hot. We choose the hot ones. Blistered them on the grill and then put them in a paper sack to steam, When cool I peeled of the charred skin, seeded and wallah pure goodness was left, We have a neighbor and friend who has a sister in New Mexico. A few years ack they brough some ome and gifted us a bag full. I have been hooked ever since, Thanks Steve BilletHead Very nice. I don't know that I've ever had a fig. Jalapeno corn fritters sounds great too. Love the Hatch chiles -- they're showing up in stores around here too. What's gonna become of them in BilletHeadville?? BilletHead 1 John
BilletHead Posted August 19, 2016 Posted August 19, 2016 Yes Snagged good guess! They go good with anything and on anything and in anything. Scramble with eggs, endless possibilities. I will be making some grilled cheese sammaches tonight and there will be some in there too. I will link to a recipe later on that sandwich. BilletHead Posted August 19, 2016 Posted August 19, 2016 Ok now you all keep you mouths shut and don't tell Mrs. BilletHead her surprise . Went to town and bought a half Gallon of good vanilla ice cream. Got home and picked figs, Started charcoal, when good and white added some split pieces of peach wood. Washed and split the figs and loaded the basket and went to grilling, Ended up with two baskets full. The smell of the caramelizing figs was out of this world. Finished grilled figs, Covered them with foil and hid in outside fridge. This evening I will make her happy. She deserves it for putting up with me, BilletHead Johnsfolly, ness, Flysmallie and 1 other 4 "We have met the enemy and it is us", Pogo If you compete with your fellow anglers, you become their competitor, If you help them you become their friend" Lefty Kreh " Never display your knowledge, you only share it" Lefty Kreh "Eat more bass and there will be more room for walleye to grow!"
