How'd you do the enchiladas @BilletHead? I think that'll be my next foray

No pictures but I made asparagus omelets this morning.  One of my favorite ways to fix it.  Lightly parboiled and then dunked in cold water so it's tender crisp before going in the omelet.  Makes for a tasty breakfast.

It's coming and can be used with domestic turkey and chicken. Some might shudder at the ingredients but it is really good.

Marty says some of you want turkey enchiladas recipe.......

2-10 3/4 oz mushroom soup.   

1/2 cup sour cream 

2 small cans diced green chilies 

12 flour tortillas 

2 cups shredded Monterey jack or cheddar cheese (or mixed)

1/2 cup chopped onion

2 cups cubed (cooked) turkey or chicken breast 

Combine soup, sour cream, and green chilies...set aside. Mix turkey, cheese, and onion...add half of the soup mixture.  Warm tortillas and fill with turkey mixture...roll and place in pan. Pour remaining soup mixture over top.  I usually top with more grated cheese!!!!   Bake 350 for 30 minutes.  Top with lettuce or olives??? Whatever you want!!  Or nothing!!??

A different approach, but great for left over bird, left over burger, left over pulled pork or smoked brisket, or made from scratch. For birds other than wild duck or turkey, think about using green enchilada sauce.

Hoisin garlic noodles with pork lumpia. Having a great Asian market in town makes a difference.

Had to look that one up! Kinda like harumaki :D 

I actually only know that because a Japanese restaurant near here calls their spring rolls harumaki. I could make a meal of them -- they're delicious.
