rps Posted October 23 Posted October 23 Did a cooking demo that included dressing and queso. Of course we had leftovers. I cooked a burger, covered it with dressing and topped it with queso. Daryk Campbell Sr Posted October 26 Posted October 26 I bought the (half) pork loin from Walmart. I did not trim it at all. The recipe states to wrap it with food safe thread. I didn't have any, so I used the skewers. I used the recipe from the following link. I thought it was amazing, the kids didn't seem to care for it, but they insist it was good. https://cookthestory.com/how-to-stuff-pork-loin/ The Brussels sprouts were tossed in olive oil, course ground salt and pepper. Roasted for 20 minutes while the pork was resting, added the parmesean cheese after and roasted for 5 or 10 minutes longer with the pork. Next a batch of BilletHeads BBQ sauce and cowboy candy, Some fried dove with mashed potatoes and dove gravy, Hen of the woods mushroom (maitake) to be separated and cleaned, Made a couple burgers out of some meat sourced form a new meat market that is now in town (warden's meat) 80/20. Flavor was great but trying to get past the fat content. I know fat has flavor but we are used to a leaner grind. Maybe try the 90/10 next time. This being said it's been literally years since we purchased hamburger meat. I was gonna make some masubes(Hawaiian Spam Sushi) today and discovered that The Japanese like gizzard shad nigiri (fish on top of rice type sushi). There may be an untapped market for sushi grade gizzard shad! rps 1
