how big was that trigger?  I have been wanting to try them for a while but its either not in season or too small every time I go

Triggerfish are top shelf for table fare.  Way way better than redfish if you ask me and no I'm not joking.  Another often overlooked excellent and I mean five star table fish is sheepshead.  Just don't let them bite you or try to put a stringer anywhere other than through their eyes.  They'll bite through that stringer in no time and be gone like a wild goose.

They do. They are such a hit or miss species. There are likely folks out there that can consistently catch them, but for us they seem to be pretty hit or miss. I'm actually more inpressed on how much we like the puffers, which are much more common. They are going to be a more targeted species when we want fresh fish.

Never ate a puffer.  Good to know though.

And as for what's cooking... a cool rainy fall day.  So beans and cornbread.  A Burger shank and some country ham pieces, pound of great northern beans, a sweet onion and some carrots.  It's smelling pretty good around here right now.

Cornbread is a package of Jiffy, add a tablespoon of honey and a tablespoon of chopped pickled jalapeno's.  Cooked up with a crispy crust top and bottom in a preheated and oiled #5 Made in USA Wagner skillet.  The jiffy box says bake at 400.  415 works better for me.

For when it's ready, I opened the next to the last jar of tomato relish from a couple of years ago.  Think chili sauce with a richer spicier (not hot) profile.

Gonna be a good supper.

You got that right. I have to get back up to PA to see if that Wagner Arc logo is still available.

I'm dragging my behind in finishing that hammered ugly skillet. Still needs one more soaking in the Easy Off then seasoning. Need to get that one done before getting any "new" old skillets.😉

Ever had hogfish or triple tail snapper?  They are both top shelf too.  Had them both on the trip to the Keys.
