Gazpacho made from tomatoes and cucumbers from my patio garden. Braised chicken with Mediterranean spices, garbanzos, olives, and capers.

Many years ago after watching the movie Ratatouille my son decided he (mean us) should make Ratatouille.  I will admit it was good but It didn't look nearly as composed as yours.

Thank you for the compliment. I have seen several ugly vegetable stews called ratatouille.

The famous chef, Thomas Keller, was the consultant on the movie. What he had them draw was actually a dish called a tian. They look prettier but with almost the same flavors.

I large dice the veg (onion, eggplant, zucchini, and yellow bell pepper) and fry each separately over medium heat. I try to have the edges slightly brown by the the time the vegetables are cooked. All go in a bowl. I peel and seed the tomatoes and cut them in chunks about 1" in size. Garlic goes in with the onions. Thyme goes in the combined vegetables. Just before serving (warm or cold) I add minced basil.
