I am most definitely a crock pot fan for many many things.  I do love smoking stuff and messing with a smoker just because its fun, but for the sheer simplicity and ease of use nothing beats a crock pot.  You can put dang near anything in a crock pot, add seasoning and liquids, turn it on and go to work, when you come home, it is ready.  I have lost count of the number of things we have put in at night before bed, let cook all night and have them for lunch or take to a church pot luck.  Always end up waking up in the middle of the night thinking what is that smell, mmmmmmm.

I have been thinking about this recipe for some time but hadn't had enough chanterelles (yes again with those guys) to make it. Made a roulade with chicken breast that we butterflied and flattened as thin as possible. I seasoned inside of the chicken then added a filling made with sauted chanterelles, minced dried apricots, minced onions, and garlic. I browned the chicken rolls on both sides and placed them on a tray and into a 375 deg oven to cook the centers. I deglazed the pan with more minced onions, water (chicken stock probably would have been more flavorful, didn't have any), and a 1/4 cup of brandy then burned off the alcohol and added cream and small amount of butter to the sauce. Served them with brussel sprouts and butternut squash. (pictured before I added the sauce)

When my Weber Smoky Mountain wore out a few years ago, I didn't replace it and set about learning to BBQ on the kettle. Everything comes inside to finish now -- either in the oven or the crock.

I picked up this bad boy a couple years ago. Non-stick, lightweight insert and it has a browning function -- that really works. Has a rack and you can steam in it too. A lot more expensive than a good old Rival crock, but I love this thing.

What an awesome name for that dog! My dog get's all excited when I fire up the grill. She won't try to steal anything because she knows she will get something from it.

I have never put coleslaw on a pulled pork sandwich. I may try it someday but it just doesn't sound appealing. But if you want the beast pulled pork sandwich ever then you need to smoke a log of bologna with it and place a thick slice of that under the pork. It is amazing.

I love a slice of  "Real" baloney on a sandwich, and pulled pork would just be better, add the slaw on top, I prefer the creamy style and it is even better.

I always thought cole slaw on pulled pork was a stupid idea...until I tried it. :D

I can't stand anything on any type of sandwich that can make it soggy or give it a mushy feel. It's not the taste that bothers me.
