Love the bark on that Chief!  

I must apologize for not being ready to take photos tonight, really didn't expect it to be photo worthy.  With my wife recuperating from her surgery, and it being our turn to cook at Sunday supper with friends, I opted to attempt Chicken Cordon Don Blu.  Yeah I am pretty confident is isn't spelled right.  Chicken breasts were huge and I had to split them before i pounded them.out thin, seasoning was salt, pepper, garlic powder and onion powder, to which I added a little Old Bay, cause I like it that's why.  Rolled them up with the required ham and Swiss cheese, wrapped tight with plastic wrap and chilled hem for a while.  2 heads of cauliflower, cut into edible sized pieces and drizzled with Italian flavored olive oil, and a package of dry Ranch Dressing mix.  Chicken rolls went into the flour, egg, then panko (which I had toasted in a skillet earlier to a golden brown), and onto a baking sheet, 20 minutes later I put.the sheet tray of cauliflower in as well and went to making on sauce.  Butter, garlic, flour, milk and shredded parm cheese.  With my wife calling instructions and our friends trying to help me.  End result, dang good.  Ate way too much, did have a spinach salad to attempt to offset the cheese etc. in my arteries.  I forsee this one coming around again at friends supper night.

 Curious -- do you (or anybody reading) trim fat before or after doing a butt? I always do.

 As a general rule no I do not.  But this one had just a little excess on it and I slightly trimmed it. 

  Now a pork shoulder I always trim.  I always try to test out my butchering prowess and try to get that big hunk of skin off in one piece.

Wife gone to visit mother. Cooking for self. Honking large omelet with onions, potato, ham, mushroom, cheese, and three eggs. Served on salsa.
