Would you rather have peas with mushrooms or peas with pearl onions? Both done the right way of course. Me? Tough choice but would have to go for peas with pearl onions.

The onions flavor the peas, mushrooms are mostly neutral in flavor. "Life has become immeasurably better since I have been forced to stop taking it seriously." — Hunter S. Thompson

Let the bird sit, covered in cheese cloth and on top of rock salt, in the refrigerator for a day or two (max 2 days). Quick rinse and pat dry before roasting. The bird will lose moisture, but the flavor and texture go through the roof. Think about it. This is a wicked cross between "corning" and "dry aging." I LIKE THAT!!! Thanks!!!! BilletHead I like peas, even when I was a kid I liked peas. They grow above ground like an honest vegetable, not underground like those nasty root things. (except for potatoes which are perfectly acceptable). ness, BilletHead and Terrierman 3
