My wife making homemade Pot Stickers from scratch! About every two weeks she does this!

I love pot stickers! In London, Nancy and I once went to a restaurant called "Dumplings." We ordered the "one of everything" item on the menu. It was great!

Any chance you'd share the recipe? I love pot stickers, but only tried to make them once. And that was with store-bought won tons. They were nothing close to what I was hoping for, so I never went back.

Any chance you'd share the recipe? I love pot stickers, but only tried to make them once. And that was with store-bought won tons. They were nothing close to what I was hoping for, so I never went back.

I'll ask my wife. She is from Hunan where they like spicy food. She learned the noodle and potsticker thing from her Aunt, who was from Tsing Tao (like the beer). Where it's all about the dough.

Looks like a nice, well-built rig there Chief.

I like engineering design that went to it.

The fire area is not small and cramped like other models. It has a fire grate that allows the ash to fall away from the fire.

Both grills are porcelain coated which I really like. There is space enough to smoke many pounds of meat and sides.

And the access door is larger than other makes on the market and the water pan is placed higher out of the way. Actually I think the door is placed lower to allow bettter access to the fire.

It has 3 adjustable vents on the bottom and one on top. I didn't boil the temp gauge to check accuracy. But I don't use them anyway.

I have a off-set smoker also. And I enjoy it. But I think the bullets better. Heat and smoke naturally rise up. Which is why I think bullets can be very successful. You have and can maintain better heat control and the heat is more evenly spread throughout the cooking chamber.

With a stick burner, you are forcing the heat to travel horizontally from the firebox then through the cooking chamber. This causes many tempature differences from one end of the cooking chamber to the other. That can be a help or a hindrance.

I like them both but, I think I like bullets a little better. Plus they take up less space.

Coming right up, stuffed cubanelles ,

Todays feast was goooooood. Stuffing consisted of Italian sausage made with Canada goose and pork. Added onions, garlic, oregano,red pepper flakes and tomato sauce. Cooked it all up.,

As the coals on the grill got ready peppers were sliced and stuffed with the meat mix,

Then the peppers put on the grill, indirect heat and lid on the weber to cook some,

Cooked for a while, how long? Don't really know just kept peeking once and a while until the peppers started getting soft and moisture in pans began to bubble. So now to top it off with Colby jack cheese and back to cooking covered,

So what for a side? Well did not really have anything in mind but did have some Libby's jalapeno potato salad left over. Spicy stuff we made Thursday. Plated up and feasted, washed down with peach iced tea,

Geez Gavin, the man's got a new smoker....why go all JD on it??? :D

Chief -- you hit on it earlier when you said something like 'once you learn to use it'. There's more than one way to skin the cat. Me, I'm learning to do this with a kettle. The last two times have been dang good. Hoping for more this time.

If you achieve your desired results, who cares how you got there!
