Thawed out a leg o lamb today, boned it out, all the fat & silver skin gone. Ended up with 3 good muscle cuts and a couple dinners for the dog. Resting in a Greek style marinade with lots of lemon over night. Will do with some potatoes, etc for guests tomorrow. Thick cut pork steaks this evening, beans & green salad. Used off the shelf blues hog rub & their original sauce. Wife & Kids loved it. A tad too much sugar/sweet for me, wanted a bit more heat, but results great for off the shelf. Pork Candy.

          Ok some of you were cringing when I spoke of keeping the wobbly bits from our wild turkeys, This was a loose term for the edible innards which I will be using in dirty rice again. The liver, heart and gizzard and actually you cannot discern the taste in the rice dish. Heck I don't even like liver in any form but it works in the dirty rice. Now I also talked about the turkey fries. The gonads, nuts or balls. In the turkey or any fowl for that matter they are no low hanging fruit like mammals. In the fowl they are actually tucked way up next to the kidneys. I like to try anything safely edible in the game we take. Not everything quite yet but working on that. I did the fries from one of my gobblers and saved the fries from Mrs. BilletHead's yesterday. So just a bit ago I cleaned, dusted in seasoned flour and a quick fry later she did the taste test. She said not too bad and had the same thought I had. Pretty bland but there is a small background taste that we have never tasted before. Now we can say we did it. Pat also said to not judge her looks this morning as she has been working in the yard and garden :) .

Also did 3 slabs. Had to cut them in half to get them to fit. Still waiting on a smoked Mac and cheese to finish. Doing a different twist on it. Using a nacho cheese as the cheese sauce.

      Good looking eats there Chief!

You guys are shaming me.

In a bit I will roast a bacon covered pork tenderloin in the Komado Joe Jr. (hikory will be involved) and finish a panzanella I have ready.

Honestly I have no clue what I am having tonight, am seriously thinking about eating whatevwr it it and bolting for a little crappie fishing from the bank.

So I used a jalapeño nacho sauce. It's a very kid friendly sauce. But boy let me tell you! Smoking it must have unleashed the hounds! The heat really intensified!

That looks great! Figure a regular bechamel sauce would turn to glue in a smoker. Substitute with processed cheese and oil makes sense. Lamb dinner went well. Trussed them up to cook evenly, Got Martha to agree to peel all the potatoes for an hour of IPad. Guests loved it! One brought mint jelly(barf) but nobody else used. What she wants, I don't care.
