MOPanfisher Posted June 28, 2018 Posted June 28, 2018 Carp is the preferred substitute for smallmouth when cooking. Gar or trout are a distant second.
BilletHead Posted July 1, 2018 Posted July 1, 2018 A nice easy rain here in BilletHeadVille this morning. Good day for other duties like a batch of lemon rosemary shortbread cookies, While that was going on I put on a batch of chipotle jerky into the smoker, It will be smoked for awhile then finished in the dehydrator. A nice ribeye is in the vac bag with rosemary and thyme from the garden with some foraged wild garlic. In the fridge resting right now but a bit later it will be in the sous vide cooker. Then seared over coals with oak splits, BilletHead MOPanfisher, Gavin, tho1mas and 2 others 5 "We have met the enemy and it is us", Pogo If you compete with your fellow anglers, you become their competitor, If you help them you become their friend" Lefty Kreh " Never display your knowledge, you only share it" Lefty Kreh "Eat more bass and there will be more room for walleye to grow!" MOPanfisher Posted July 1, 2018 Posted July 1, 2018 I have some lemonade/garlic chicken marinating for kids supper tonight. Will go into the crock pot with some mini sweet peppers, and later some chunked up squash, because this time of year you have to have squash with about every meal. No rain in spfld yet, except for a few sprinkles, hope garden at home is getting some. BilletHead, Gavin, Johnsfolly and 1 other 4
Gavin Posted July 1, 2018 Posted July 1, 2018 Have a pork butt and some carnitas in the smoker now. Will pull the Carnitas in about a half hour and drop them in the instapot. Follow up with 6 racks of ribs. Johnsfolly, Chief Grey Bear, tho1mas and 4 others 6 1
BilletHead Posted July 1, 2018 Posted July 1, 2018 Good stuff going on by you guys today! Got the ribeye in the sous vide cooker with some rosemary and thyme from the garden plus some wild foraged garlic. An hour at 129 degrees. Got it pulled and over charcoal and white oak splits for a quick sear, As i was doing this the Mrs was boiling sweet corn from the neighbor/farmers field. Prepping a baked potato . Cukes from the garden in with onions too. Split the steak and the potato. A man can just eat so much , BilletHead Gavin, tho1mas and Johnsfolly 3 "We have met the enemy and it is us", Pogo If you compete with your fellow anglers, you become their competitor, If you help them you become their friend" Lefty Kreh " Never display your knowledge, you only share it" Lefty Kreh "Eat more bass and there will be more room for walleye to grow!" Chief Grey Bear Posted July 2, 2018 Posted July 2, 2018 I'm back. For a minute anyway. I went out on a limb and decided to grill some avocados to make a guacamole dip. That is a game changer! The next time you make some guacamole, I urge you to grill them for a few minutes first! I also have some that I have smoked, but I haven't tried them just yet. I will let you know how that turns out also. tho1mas Posted July 2, 2018 Posted July 2, 2018 BH - Have you tried cooking the roasting ears with the sous vide? Bag them with some s&p and a couple pats of butter. It cooks them but leaves it crunchy. Anova recipe. BilletHead 1
