Gavin Posted October 20, 2018 Posted October 20, 2018 Grateful to my neighbor tonight! 3lbs of fresh ground deer and 1/2 of a smoked deer tenderloin fresh off the smoker! BilletHead and Terrierman 2
MOPanfisher Posted October 21, 2018 Posted October 21, 2018 Was on Grampa duty today. Daughters birthday was yesterday and she requested some fresh crappie for supper. My wife told her there were some in the fish bowl. You know how some days everything is perfect, brown on the taters and onions, fish crispy on outside and oh so tender insude, cornbread with just right amount of crust! Yeah well this was that day at all. However everyone seemed to lime it, if judging by the amount they ate. Photo would have been ugly, but taste was good on everything. tho1mas 1
rps Posted October 21, 2018 Posted October 21, 2018 Did not post last night. I made a dish I have posted before, enchilada casserole. Picture below. I also put a brisket on for an overnight smoke. I tried out a different method of charcoal arrangement and management. It did not work. When I woke up for my mid-sleep bathroom visit, the fire was out and the meat was warm and not cooking. I wrapped it in foil and put it in a 230 oven. I wound up with a very tasty, over cooked brisket that has a bottom I could use as house siding. The cliche is correct. If it ain't broke, don't fix it. I will salvage and reheat for this evening and serve with the pinto beans I put in the slow cooker this morning. Picture of last night: Edit: I just put two chunks of the wall board brisket bottom into the beans to add additional smokey flavor to the bacon base. I vac sealed the rest and it went in the freezer to perform the same task in the future.
MOPanfisher Posted October 21, 2018 Posted October 21, 2018 Chopped up brisket in the beans is ALWAYS a good thing.

BilletHead Posted October 21, 2018 Posted October 21, 2018 I see you all are eating well as are the BilletHead's, Todays meal started with a hen of the woods casserole . We have been watching a pair of hens growing now for 10 days. Yesterday they were picked. This morning part of one worked up beginning with sautéing mushrooms and onions, These were layered in a dish and then a sauce on top of that, Into the oven it goes! Walleye battered and fried, As this was happening I went to garden to pick lettuce. I washed and made salad, All ready and proceeded to fuel our bodies., Something from the lake, woods and garden.
