After stuffing myself with boring old fried crappie and taters routine last night, tonight I am including more healthy fare.  My sister brought me a couple of cushaw squash, so peeled and chunked it up,  tossed it in at with a couple sprigs of rosemary and boiled for about 20 minutes.  Pouted off the water and removed the squash chunks, mashed them added butter salt pepper and garlic.  Not bad.  Next I hit the turnip patch for a bag of greens and turnips.  Final piece will be some marinated grilled or steak on the grill.will see if I remember photos or.not!

Surprise I actually made a photo plate  (moms) so you could see.  My plate is piled much higher and messier.

Friday nights after teaching all week usually end with a pizza. For tonight's version, I took some pizza sauce I made a few months ago from the freezer. We will use salami, mushroom and cheese to finish this simple version.

I will make a carrot salad to go with it.

After the roux was done I added the Trinity, onions bell pepper celery then add spice lots of cooked and shredded  duck breast sausage and shrimp. Served it over rice with some hot sauce on top

The answer may not lie at the bottom of a glass, but you should always check

Halved acorn squash with a big ball of breakfast sausage in the cavity.  Squash sprinkled with S&P and some brown sugar pressed on.  Baking in the oven as I type.  Should be proper World Series fare in about an hour.

Chickens got the squash guts.  Everybody's happy now.

          Two things going on here today,

  First off pulled thin sliced Canada goose from the cure for jerky. Put in the smoker for three hours, then taken off smoker racks and put on dehydrator racks to finish off. 

thumbnail_1027181404.jpg   this afternoon grilled deer back strap roasts. Pat made a cherry bourbon sauce to put on them. A big pile of sweet corn and salad from the garden.thumbnail_1027181521.jpg

The 13 and 14 year old grandchildren are here scarfed the meal down. Gave them a sample of the jerky and they are pacing the floor ready for more,

My only interesting addition for supper was a big Green tomato I grabbed from the garden.  Flour, spices, and some bacon grease.  Tasty, put one on top of my burger, was good but not as good as I hoped, but the extra slices were fabulous, crispy, spicy and that green mater whang.

When I smoked the brisket last weekend, I put the leftover beef in the leftover beans.

Tonight I turned that mix into burritos. Sides of fresh salsa and guacamole.
