Glad to see you got your avacado fix.  Wishing had a couple ripe ones right now, peel, slice and shake a little house seasoning on them and eat.  Heck they are even supposed to be good for you.

My wife used to be a grey in the middle steak person, now after letting her taste some more better ones I usually catch heck for over cooking them if they are just pink in the middle.  Other folks can eat their steaks burned black or still raw, don't matter to me, only how I have to eat them matters to me.

Seemed like a good pancake night.  Basic mix was bisquick, coca-cola, then some vanilla powder and old town spiced sugar. Moms was plain, wife requested chocolate chips, mine got raisin and a drizzle of caramel topping.  Little smokies on the side and a couple of over easy eggs on top.  Lots of syrup, think I will just sit here in the big chair for a while now.

Did some coconut curry fish.

Quarter cup curry paste (mix of mostly green with a little red)

Quarter cup coconut milk

Quarter cup olive oil. 

Mix that into a paste and cover a foil pack. Spring some basil, cilantro and stalks of lemongrass. Lay on teo fillets of swai. Do the same on top of the fish. Fold and seal pack.

Cook five minutes per side on med. High heat. Serve over coconut jasmine rice. Pretty sweet. Nice curry taste. May add some chilis next time or a spicier paste. Only get to make this when i eat alone which isnt too bad since the whole thing came together in under 20 minutes.

Looks awesome. Thanks for posting. Looks like a recipe that I would like to try. How did you prepare the jasmine coconut rice? I have been using jasmine tea to infuse the rice.

Looks good Ness. What syrup did you use? Hopefully real maple. This morning was Amish cinnamon raisin bread french toast with Folly farm eggs.

 Love us some waffles. Pat uses a Belgian recipe.  I don't know one from the other but hers sure are good. We eat them quite often. Make extras and freeze for an easy grab it meal. Makes a nice evening meal too.
