I am a big fan of a thick cut bone in pork chop.  Known at this house as an Iowa chop.  Whenever I was there to hunt lo, those may years ago, an  Iowa chop was always what I ordered.  The place we frequented had a homemade salad bar that had to be 30 feet long.  Baked potato that came with was mostly a wasted effort.

I do admire a guy that admits shortcuts on the rice and salad. Time is scarce!

Mostly I am just lazy.  Besides I like the spring mix salad boxes.  OK let me see, marinade coca cola, soy sauce, a dash of worchester sauce, some bbq sauce, a little brisket rub and I think that was it.  After marinading I seasoned liberally with my house seasoning (s/p/gp) and a little cavenders because I like it.  Dessert was almost as well thought out, for me some good vanilla ice cream with raspberry preserves, for wife, mom and grandson pudding cups in butterscotch and lemon flavors.  The chops were exactly as I like them with a little pink in the middle, not much but a hint.

Dang. Agree on the chops. It’s a fine line between delicious and shoe leather.

Tonight here it was Aunt Lori’s Sloppy Joes and tater tots with ness 2.3. 

First I peeled 5 pounds of Yukon Gold potatoes, then parboiled them for 290 seconds, and ran them through the tot die on the Kitchen Aid before putting measured amounts into Grandma Vi’s tot press....

Ok—I’m making that part up. It was Ore Idas, and they were tasty done in the oven. Woulda been better deep fried, but I don’t do dat. Super sweet sloppy Joes for the boy, and sent him home with enough to get him through a day or more.

It was a good night here.

Today I told my eighth grade to bring chips tomorrow. Tonight I made Pico de gallo and a roasted salsa (many jalapenos, tomatillos, poblanos, garlic, tomatoes, spices, lemon, and salt)

Nothing home made here yesterday. Did have beef pot pie from the Amish market and an apple and walnut pie for dessert to celebrate. March 14th - PI day.😁

                      Friday went to Springfield messing around. Some shopping in that metropolis was done. Sam's and HiVee.  Enjoy the variety and quality we don't get in BilletHeadVille but seem to spend too much down there. Two 5lb. blocks of sharp cheddar and two 2lb blocks of Colby Jack. Some of this cheese will be sliced into smaller blocks to be smoked. Produce pretty good too. Six pack of sweet bell peppers. Part of those will be for goose fajitas tomorrow. So we walked by the frozen sea food thinking about some shrimp. Some stuff from Asia raised in no telling what kind of conditions. Passed by that and soon spied the fresh seafood counter that held amongst other things a small mountain of gulf shrimp. I asked the guy if it had been froze. Nope fresh from the gulf. That sealed the deal and two pounds came home with us. Boiled in seafood mix and chilled in ice. thumbnail_0315191642 (2).jpg

          Salad, shrimp and garlic beer bread toast. A nice treat and out of the norm,thumbnail_0315191645 (2).jpg   Some shrimp left for today. Now that will take us backward to a couple weeks back when again we were in Springfield to try Pho for the first time. Good stuff and I will be making the broth for the soup next year with deer bones maybe sooner with some beef bones. While awaiting our Pho we had some spring rolls. Again good and I mentioned to Pat we should try this. This brings us to the use of the leftover shrimp. We got some rice paper wrappers and decided today to tackle that. So this worked too but we got some extra large spring rolls. Stuffed to the max so don't laugh. This was todays main meal. I polished off four and Pat almost three.
