I love Cajun/Creole, MOPanfisher -- that's got a little liquid to it. That's the way I like it. Sometimes it's served too dry. And Chief -- always with something interesting! Salt and pepper it and lay a strip of bacon across it. Wrap in foil and grill till soft. We have done it with some of the heart cut out of the whole head and replace divot with butter, S&P, wrap the head in foil and cook on the grill. We need to do the quarters like this. Have you tried a whole onion with divot cut out and replace with minced garlic, S&P, Wrap with foil and grill package until soft? Amazing! Talk about changing the flavor of an onion! You would have no idea how sweet they are!! im going to try your way too! On the cabbage I used to fill mine with BBQ sauce. This one here I filled with bacon drippings.
