But with he gas smoker I can take 30 minutes to change the oil in my truck, or weld up a broken brush hog, or take a shot nap, etc.  without fear of the temp spiking up to 400 or so.  Besides I like Mrs. Pauls too.

Yes. Mrs. Paul is a nice, nice lady. I don't reccomend stopping by to Trick or Treat though. 

On a side note, you can buy your meats and things already smoked if you have too many things going on. Cheaper in the long run too.

Was wrong it's Gateway Drum Smokers. Might be more work than a stick burner offset. Do love my stick burner. Just add an 18" log or two when needed.

My only concern with drum cookers is the direct heat. There is either no defector or you have to purchase it seperate. 

It just seems to me that the low end of the hanging meat is more susceptible to burning and or drying out due to being much closer to the fire than the other end. 

These type cookers are making great products though. Can't argue with the success of them.

My old stick burner was some what that way, you had to rotate the pieces of meat around to keep them from overcooking, also had a big pan of water I kept closest to the heat.

I have a Masterbuilt Electric. I find the convenience factor has led to me smoking more items than i would have with a charcoal of propane smoker. You buy it to use it right? I still have a weber kettle that I can use for high heat or other various things, but the temp set and control feature of the elcetric is pretty nice. Plus mine came with an internal temp sensor, so you don't have to open the box to check temp, another added bonus. 

Sure it's not gonna win smoking contests, but still gets plenty of flavor and well worth the convenience factor to me.

Interesting conversation.

When my Weber bullet got too rusty and messed up I got rid of it and didn't by another. I hated dealing with the water and grease in the pan, but other than that it was great for the little amount of stuff I smoke. Always felt like the lid design was bass-ackwards because the lid fit into the body, not over, so rain would get in and pool in the bottom, even with the expensive cover on.

I think the electrics sound pretty nice since they are thermostatically controlled. I really don't like to have to babysit a smoker all day or night. But honestly my current process -- start in the Weber kettle and finish in the oven -- is producing great results with little babysitting,  so I don't see a smoker in my future.

That's why I keep mine on the front porch.  That and so passerby's know where the hillbilly lives.
