Maverickpro201 Posted March 30 Posted March 30 How Do you cook your Prime Rib? Low 225* and slow until inside reaches 120* or 350* until it reaches 120*? Do you sear yours before you cook it? Do you dry brine yours the night before? Do you rub it with spices 2 hours before? Do you take it out of refrigerator 2 or 3 hours prior to cooking. Just wondering how you choose to do it. Terrierman Posted March 30 Posted March 30 I coat the prime rib with coarse salt and pepper a couple of hours before cooking. Get the kamado joe as hot as it will get. Put the prime rib on for a couple of minutes each side, then shut everything down. Give it a couple of hours that way and I bet you will like it. Johnsfolly, ness, Quillback and 2 others 5
rps Posted April 2 Posted April 2 Two choices. Low and slow, then sear (usually a 500 oven) or sear and drop to lowering and slow. I have used both. Good reasons and results can suggest either. Here is my gold standard: BilletHead, Johnsfolly and Maverickpro201 3
