Church fish fries used to serve "Jack Salmon" fried with tails on, but these days it is usually fried cod or shrimp.

One of the things I've often wondered is how walleye became known as "Jack Salmon" and is that name synonymous with the Ozarks, or are they called that in other areas of the country as well?

I would say around here the locals learned the spawning habits and use of certain areas and compared it to salmon.  Who knows?

The Altenburg Fair still sells a small white meat fish fried whole, bone in, as walleye.  Maybe farm raised?  Tasty.

Harps grocery store sells walleye (fillets) from time to time, $13/lb. last time I saw it.  Tribes in the north harvest walleye and there may be a commercial fishery too.  Seems I heard that once walleye fry get past the stage where they are feeding on plankton, then they require live fish to eat and if they don't have something like minnows to eat, then they eat each other.

  Bingo,

When I was up there bowhunting bear one spring on lake of the woods commercial walleye harvest was still going on. It's been 35 years ago.
