    What's Cooking?

Next time I will cut the risotto recipe in half. Ended up with three to four cups of cooked risotto for three people . The shark recipe https://honest-food.net/shark-recipe-tomatoes/ can be used with any firm white fish like white bass.

    What's Cooking?

Here's actually a post about cooking something. This time it was some more of the shark that my daughter caught in Virginia and was my last home prepared meal before I headed back to Missouri for work this last weekend. I found a really simple Spanish recipe of Hank Shaw's for shark with tomatoes. I had a couple of filets that I skinned and removed the blood line then cubed. Got my other ingredients together, slivered garlic, toasted pine nuts, and diced tomatoes (heirlooms including one Cherokee purple). I also sliced some crimini mushrooms and minced some shallots and garlic for a mushroom risotto. I began the risotto by sauting the mushrooms in a bit of olive oil, then some chicken stock. Cooked about 4 min and put in a bowl and set aside. Next came the cooking of the garlic in some butter, then added the Arborio rice, and shallots. Cooked that until the rice and shallots were translucent, then added pinot grigio, and warm chicken stock. Then it was about 25-30 minutes of stir, add more stock and stir.... While doing the risotto, I dredged the shark pieces in seasoned flour and browned on all sides in olive oil. I put the shark onto paprer towels and added the garlic and pine nuts to the pan, then the tomatoes and more pinot grigio. Once the tomatoes were cooked through, back in went the shark. Once warmed then some chopped parsley. The risotto got a 1/4 cup of fresh grated parmesan and the sauted mushrooms. Served it with more local sweet corn (with Old bay!)

    What's Cooking?

What are snoots like? Pork rinds, crispy bacon? Thought about trying them. Maybe on my next trip into St Louis.
  11. I would agree. Not to difficult to do.
  12. This old man is sitting in a comfortable chair. You got out and caught some fish! Congrats!

    What's Cooking?

I have not had these chips. Would be interested in trying them. Though I would like to know what classifies as St Louis style hot sauce?
  14. I have voiced my opinion on other threads about whether triploids should be considered as state or world record fish. I would love to catch some but still think that they be considered separately from diploid trout for record considerations.
  15. I know that I may get some grief but folks have been producing and releasing triploid grass carp for decades. They are stocked for weed control and because they are considered sterile should not overpopulate the lake or pond that they were released into. Lots of issues with this practice. I don't know how long folks have been producing triploid trout.
  16. Looks great Duane! Would like to see that running in a 2 to 3 foot deep fast run on the Current. That bait just ticking hard off of rocks and veering off to the left or right with a big brown slashing at it as it passes it by.
  17. I've met Hank twice now. Enjoyed talking with him. He would fit in well here on the forum. Anyone that hunts or forages has to check out his website that BH provided earlier and cookbooks. He takes a global view on his dishes that stretches my thoughts on how to prepare game meals.
  18. Yes there are two species in the photos. I am partial to the breeding male ozark sculpin.
  19. Rick were you catching goggle-eye (Ozark bass)? Smallies? spearing longears ?
  20. I agree. Would love to catch a couple of those big brown trout in Taney. Caught some elsewhere but not there. Lots of eye candy in this post !
  21. Bennett's Springs Breeding male Ozark sculpin Banded Montauk/Current river North fork of the White Spring river Duane I hope that these help.
  22. I know a guy that may have some reference photos that you can compare to for color schemes! I don't have them on my phone.
  23. I enjoyed seeing other hunter's deer at the check in station. The telecheck is so covenient. I have a friend that shoots big bodied deer. He telechecks at the recovery site if he has signal then he often quarters the deer to get it back to his truck.
  24. This is the greatest aspect of this forum. Guys actually take out total strangers to fish with them. Like most of us the weekends are so limited that it never fails to amaze me on how folks on here give away their time to fish with others from the forum. @lmt out and @wtr dogs, congrats to you both!
  25. Congrats HW! Looks like that hellgrammite was working well!
