  1. Glad to hear that he is doing better. I can't wait to see the next set of photos of him eating one of your meals on the what's cooking thread☺.
  2. Thanks Gavin. That is pretty cool. I see one of the male bears (#1017) was 485 lbs when they caught him.
  3. Keeping your grandson and family in our thoughts. Hope that he gets well soon.
  4. Those are fantastic fish. I have seen a lot of Phil's videos as well and I also personally saw a brown trout down there one time that was at least 26 to 28" in length. I had a friend hook and lose a brown that he estimated at over 10 lbs. Based upon those observations, I look at Taneycomo as the place where I could catch a trout of a lifetime in Missouri and know that the potential for a 6 lb trout is there. My personal best are a 4 lb 5 oz rainbow and a 5 lb 4 oz brown, both of which were caught in the Current river, which is part of the reason for setting my "trophy" limit. Don't get me wrong, I will enjoy every 10 to 12" stocker that I catch and really enjoy those over 20"! I am always glad to see kids and young adults catching their trophies and thank Phil for posting them here for us to enjoy.
  5. Like Ness and Seth, I really like the Cheorkee purples. However, none were found this year and we did not start any tomatoes from seed .
  6. Ok tell me if you know this movie line. "White, white, white, it's the color of our carpets." If you know the line then you should have an idea why I brought this up now.
  7. I would rather have a Karmman ghia (carmen ghia?)!
  8. I agree that a trophy is what each person sets in their mind. For me a trophy in Taneycomo may be that first brown trout that I catch to finish one of my life goals. After that It would have to be over 6 lbs for me to consider it a trophy. If that was the same fish then all the better! I have seen plenty caught down there that well exceed that size.

    What's Cooking?

My wife picked up some beets and we had a pork roast in-house. I like pairing apricots with chanterelles (you’ve heard this before). I decided dinner was going to be a pork roast with fruit and mushroom with the beets and mashed potatoes. I made a rub consisting of smoked paprika, chili powder, granulated garlic, salt, pepper, and brown sugar. I rubbed the roast and seared all sides in the dutch oven. Once seared, I added onion and peeled garlic. The braising liquid was vegetable stock infused with dried porcini mushrooms and two cans of local cream ale (Bur Oak – Frank’s Cream Ale). I felt that the slight sweetness of the cream ale would go well with the rest of the flavors. We braised the meat at 275 for about 3 hours (wife took care of this while I was at work). My daughter and I chopped onions, chanterelles, dried apricots and cranberries. Sauted everything and then added the pulled meat from the roast. I cooked the sliced beets and just as they were tender, poured off the liquid and added a splash of white wine vinegar, S&P, and fresh ground nutmeg. Served it all with mashed potatoes.
  10. Great video! I do appreciate you showing your fly. Gives me an idea on what I could use to catch those fish. Of course I would need a kayak, a good fishing hole, and the ability to make those casts without spooking the carp ☺!
  11. If I fish peas in the Kansas river may catch a Ness☺! I always heard that buffalo had a preference for meat.
  12. I need to find a location to catch buffalo (any of the three or all three will do). The lakes near me don't have any that I know about. Need to stop focusing on the little guys and need to find some big rough fish!
  13. Great post! Sounds like a great time. Glad that the kids got into fish. Looking forward to a LA post in the near future☺.
