    I was a KCBS judge for years. Not that it made me an expert just that I went through the process to become one. I live near STL so the drives got old and I quit. Thx for tips. My wife and I are going to TX on a trip primarily for BBQ (and fishing😁) in retirement. I want to try some quality beef ribs there too. I have less than 2 years left.

    Man that’s a tough one. Salt and smoke seemed to be genuine until they expanded. Since Rona hit we haven’t been out much. Not from fear but because of shut downs.
