I mix the meat and let it smoke to brown the sausage and hamburger @ 350 ish in a cast iron Dutch oven or disposable aluminum pan then scoop the meat out with a serrated spoon and drain but save the drippings in case they are needed at the end, then mix in the remaining ingredients and then cook it for a few hours to in the low 200 range. I don't cycle the heat like he asks to in the directions when I do it on the grill/smoker.

Now you say that, after the young man at the desk asked if I wanted to go ahead and book again for the same weekend next year....He was a great help, did not catch his name but dropped about $200 in the fly shop on materials and boxes. Going to email him today with a picture of some stretch tubing I am looking for. Phil has a great selection of materials, some that I had been having a difficult time finding, at better than Amazon prices. If you have not been in his shop it is worth your time. If I understand correctly at some point in the future it will be expanding. Great Resort, Great People Great food. The only negative was that I got busy cooking and did not get to visit with @jdmidwest Thanks for the honey, that was so nice.
  8. well we have 6 packages 1.5 lbs each so 9 lbs. but we can always be safe, I can eat etouffee as fast as Cody can make it...

  10. We have 5# of costco all beef hotdogs, so I think we are good but not sure on total.... with all the other stuff Saturday..... I plan on eating @gotmuddy etouffee not an ole hot dog.......
  11. Thanks Jeff we have 5 lbs so should be enough, unless someone else chimes in I will stop and get some paper bowls and spoons. We will have mustard (not good stuff like Ricks) and relish for Friday night.

  15. Posted December 21, 2023 We are in for the Saturday lunch with some BilletHead BBQ sauce and baked or BBQ beans. in the main general chat string. We will have a dessert for Saturday, If it does not rain too hard this week to be outside on smoker I will make a batch of chili for Friday night and/or coneys on Saturday???? Are you doing the etouffee @gotmuddy

We got into this discussion a few years back.....I sent a picture of one caught in the mouth of Roaring River, to the Missouri Conservation biologist that had informed me that we did not have yellow bass in Missouri. He was intrigued and dove into it. Apparently Arkansas had stocked some in Beaver. We all live down stream.
  18. My God Son, has been running 3 of these (36v TM) for the past 4 years with good results.   20. Well @BilletHead suggested I chime in....although the ignorance of myself and my family is embarrassing. We have a number of skillets that came in on a covered wagon from Oklahoma shortly after my Great-Great-grandfather got out of prison for shooting his neighbor's ear off over a property line dispute. My Great Grandmother Hatie, who was a half Native American midwife would often put the skillets in the fire to clean and start over. It all worked fine until my wife bought one of these glass top electric stoves..... we discovered every darn one of them spins like a top from a warped bottom. Still use them to make cornbread in the oven, and in the camper and on campstove. saddens me that our old skillets are damaged. We now have some skillets from Marty to use on the glass top. We have also bought a couple from the Lodge Factory Outlet store in Pittsburg, TN they took some work to overcome the rough seasoning they put on them but were inexpensive and work well. We have several dutch ovens, both with legs and without that are newer and they work fine, I notice a lot of the newer dutch oven cooks use some type of liner... I have not to this point. We do have one aluminum dutch oven we use to make the red Sause chili on the smoker, it would damage the seasoning on the iron. Long story short, do not put your pan in the "coals"
