    What's Cooking?

There is more than one foodie on here that fishes for walleye , So that was what was on todays menu, Meal prep was started off when Mrs. BilletHead whipped up some cheesy grits with green chilies. That was popped in the oven to bake. The gas grill was fired up and so was the charcoal grill. When both were hot and ready bok choy that had been olive oiled and some S&P was put on the gas grill. The walleye had been in a bag with olive oil and rosemary. That was put in a basket and it went on the charcoal and wood fire. Mrs. BilletHead worked over the bok choy while I did the fish. When done all plated up, I may not get points for fancy plating and eating on a TV tray but that did not matter once the feast proceeded. Life is the best here in BilletHeadVille today , BilletHead
  2. Heck I talk to my plants, my bees, my chestnut trees which by the way are starting nuts. I need to do this as nobody listens to me anyway. I really need to have a visit with the gooseberry plants and convince them to pick themselves :), BilletHead
  3. Some really tasty fish coming from the lake now, Been twice in the last three days. I did mess with the bass some but wanted to catch eaters. On Memorial day Mrs. BilletHead and I launched in the dark knowing we only wanted to fish a few morning hours before the masses got out. We trolled with crank baits from 10 to 12 foot range. Smaller ones like the SR5 shadrap. It would begin to hit bottom in 8 foot of water. She out fished me. We landed 18 and four of those were keepers. Kept four big crappie too. Both days the water temp from 82 to 85 degrees. We also caught bass, drum, channel cat, small white bass, and bluegill. Yesterday I went back and did the same starting again with more shallow trolling. All I could catch was undersized walleye and bass in the 10 foot water depth. I then sized up to SR7 shadraps and went to pulling through 12 to 14 foot deep and began to pick up larger fish. Caught 14 and had six keepers. Kept my four and three crappie. Again caught other fish of all types, There were more fisher people out yesterday than Monday morning. May try again tomorrow, BilletHead
  4. I would venture to guess they are hot house tomatoes. If they were good it doesn't matter. I will be waiting with baited breath for the first ripe one from the garden. Just got in working up more rigging for getting them under control . I talked to the plants as I worked them. I swear I seen a green tomato smile back at me, BilletHead
  5. Nice Trip report DJ, A great family trip and fishing bonus. Been doing a bit of research lately in that part of the country. A couple of natives on our list to chase someday. Thanks for the post buddy, BilletHead
  6. Tomato plants going berserk, Had to put on tallest steaks I had and then put in fence posts and put strings across planters. Started tying up vines, I am not sure we have ever had plants this stout before , Even got maters on them, So hot and humid I went through two sets of clothes soaking them completely doing this little garden job. Still need to do this again in the 12' X 4' bed. Maybe tomorrow? Ready for that first BLT with homegrown. Lettuce is gone so it will be with that store bought junk , BilletHead
  7. Condolences and prayers from the BilletHead's, Bless you Gary, BilletHead
  8. Congrads John, Good looking fish you have there. I bet in person those spots are iridescent . BilletHead
  9. The cat head or the snake head? I like snakes and others peoples cats. Other peoples cats if they are not feral. All non venomous snakes in the yard get a free pass. Venomous in the yard and feral cats do not. Out of the yard venomous snakes free pass. BilletHead
  10. Do what you like and like what you do but please don't push your political agenda on me or tell me what I do or do not need . The biggest problem in life is the direction society is going. BilletHead

    What's Cooking?

Ribs with Chocolate chili BBQ sauce, Rack of pork ribs. Cut in half and covered in a rub. Vac sealed and put in the sous vide cooker at 149 for 24 to 48 hours. Pulled at 30 hours. Did not have to watch over or baby sit. Allowed us to fish, yard work and entertain our widowed friend. Made sauce. Consisted of various spices, cocoa powder and two dried and rehydrated ancho chilies and called for a new mexico chili but substituted a Palasa chili. Fired up the charcoal grill and when coals were white put on peach wood splits. Grilled and smoked on both sides then slathered on the sauce and did both sides again, Took off and plated with fried potatoes with onion, cheese and jalapenos and peas just for Ness , Meaty, tender and not overly fatty or greasy. Thinking some of the fat rendered out in the sous vide bag. Great meal with plenty of leftovers except for the peas, BilletHead
  12. tjm, I guarantee if you have a place with big bass this will work. Easy to tie and easy to throw, BilletHead
  13. Yep! That first picture of Mrs. BilletHead. That bass was caught on a four inch black wooly buggar . Early in the year I have caught bas almost as big on a slow strip inch and a half dragonfly nymph, BilletHead

  16. Probably worse in an urban than in rural as they are so much more used to people and vehicles. Kind of like squirrels. In town and in my mom's yard they look at me like I am just another nut (yes insert joke here) while in my neck of the woods they run like heck as they know a slow or still one will end up dinner . Starting tomorrow if they are in range of the back window it will be grocery shopping in BilletHeadVille, BilletHead
  17. Yes tell her even if guts are spread all over the road we need a picture. Bet Livie was livid over the incident . You know how far out in the boonies we live. in all those years Pat has hit one and I have hit one. Many, many close calls. I know high beams Brother! BilletHead
  18. Sure you can, even a girl can BilletHead
  19. Well Crapola John, They say stuff comes in threes. In this case four. Here is to hoping this means all the debacles are over and the transition to Maryland begins to smooth out. When you have time after the move Mr. Scientist begin to work on the black hole, vortex, transport device, time warp, Bermuda triangle thingy, beam me up Scotty (I mean beam me over Johnny) or whatever you decide to call it so we can meet and fish together and let the girls talk about us . Then we can talk about the native species vs the introduced non native invasive fishes 😀, BilletHead

  23. You going Harry? If so let me know and I will let my friends down there that you are planning on going to the event , BilletHead
  24. JD, That is quite a float buddy. The good, bad and ugly all rolled into one. Nice walleye! Sure glad you got the fingers unstuck pretty quick. Must of been a pretty good friend. Bet he tried real hard because if you had stayed fingers stuck together very long downing the 12 oz at a time and you had to pee . Which friend would you pick? Marty
  25. We do need a vortex or black hole to slip in and out of for get togethers😀, BilletHead
