For tonight I have spatchcocked a chicken and seasoned it with Penzy's fajita seasoning and cumin. In the roasting pan I added waxy red and gold potatoes. I have a side dish of sugar snaps and mushroom chunks ready to saute. The sauce for tonight will be my home made queso. Living large here in the Ozarks. Dang!! rps Posted November 3, 2016 Posted November 3, 2016 Last night's roasted chicken left overs have migrated to a Mexican Surprise - rice, corn, black beans, salsa, and queso with chicken chunks. Hmmm. May need a Dos Equis with that.
MOPanfisher Posted November 3, 2016 Posted November 3, 2016 Dang, I though you were going to say "may need help eating this". I finished off some of the last of the fresh produce (well except for turnip greens). Grilled a pork loin, wife made some mashed taters and she found a purple cherokee mater hiding among the jungle of vines, and picked a handull of cherry maters, boy oh boy do they have a good flavor. finished it all with some fried apples and vanilla ice cream. Sadly the apples came from a commercial orchard as my orchard dumped all the apples and hey rotted within a couple weeks, even the Arkansas blacks that usually keep all winter hiding in the crabgrass. tho1mas 1
rps Posted November 5, 2016 Posted November 5, 2016 First a picture from the other night when I roasted the chicken. Then a series of pictures celebrating the fact that Friday night is pizza night. BilletHead, snagged in outlet 3, ness and 1 other 4
snagged in outlet 3 Posted November 5, 2016 Posted November 5, 2016 I spatched a chicken and salted it up in a big bag. I'm going to season with ground coriander and olive oil tomorrow and put a brick on it!! ness, rps, Gavin and 1 other 4
rps Posted November 5, 2016 Posted November 5, 2016 My poor stove top is overwhelmed. I have a beef soup bone simmer going for tomorrows beef barley soup. I also have a Chicken Cacciatore Diablo pan ready to finish cooking. Burner three has a saute pan with butter ready for the broccoli and the last has a pasta cooker for the noodles for the chicken. I am taking pictures as I go on the chicken and will turn those into a blog post tomorrow. ness 1
Terrierman Posted November 5, 2016 Posted November 5, 2016 I killed a chicken of the woods on Thursday. Grilled hamburgers and battered and deep fried a big batch of the mushroom Thursday evening. Didn't touch the hamburgers. They were good on Friday though. Thanks to the long hang time of that particular type of mushroom, expect to do more of it tomorrow while watching Chiefs handle Jaguars. ness and Johnsfolly 2
ness Posted November 5, 2016 Author Posted November 5, 2016 ness tends get repetitive in the kitchen. If I like it, I make it often. Tonight had all the stuff for clam chowder, so that's what I made. Also been working on margaritas. This one is a little better 100% agave silver with 50-50 mix of frozen limeade and lemonade, mixed 1-1 ratio. No orange liqueur. Pretty good. John
