Double bummer on pickles. The ones above developed some black mold. No go. So, I started another batch in my 5 liter crock. You're sposta skim any white scum off the top and I did it diligently, but these were throwing off a lot more than the other time I did them, so I was getting a little worried. It would be completely covered with white stuff each day, and it was breaking up and sinking into the brine when I tried to skim. It smelled ok, but not great. So, I fished a pickle out and it was pretty mushy. Not going to eat them if there's any question, so they went down the garbage disposal like the previous batch. Dang it!!

Undeterred, sorta, I cleaned the crock and stones really well, including some bleach in there, and started some sauerkraut.  Two heads of cabbage, green leaves removed, shredded, and 3 tablespoons of pickling salt into the crock. Topped with a little bottled water to cover.

And...really a good crop of banana peppers this year. Nice size, thick walls. Did sauerkraut stuffed banana peppers. Love these! A little sweet and some heat.

For all of you food canoyzzzers out there, I have a question. Does anyone have some good Mediterranean diet recipes? I’m looking to start this diet after I’ve heard about all of the health benefits. Looking to start slow.

Cast iron skillet fried Sirloin strip w/ A1, and  marinated tomatoes in vinegar and red wine. When the steak is ready I pour on some A1. The sauce runs over the edges of the meat  onto the hot skillet and I use a fork to the drag the steak around in the simmering sauce a few times, flipping it a time or two to get both sides covered in A1 before plating.

Sure! Everything you’ve been eating, just no more meat. Cancel that Costco membership, you won’t be eating any of that prime beef. Head to the feed store and load up on grains. Us Amish guys can help. 

The reason they live longer is they refuse to die waiting for something good to eat 😀

             I told them you were my Amish wingman! 

      The key to the good diet is growing and killing and cleaning it yourself. All that you are able too where you are located. Can't do too much of  that in the city, city boys! :)

All that aside, I made some gumbo tonight,  doncha know. And it were very deelishus!
