BilletHead Posted March 17 Posted March 17 Yesterday it was chook roasted in a vintage Wagner ware Magnalite oval oven. Side of a salad a baked potato. Today was a road trip and I told Pat we needed to check out the Spring River in Oklahoma for water conditions. That was a positive deal. Looking good there. We left and I took a detour to the indigo sky casino. Why she says. It's your birthday trip for St Patrick's tomorrow. Note we have not did the casino deal for like forever. Twenty bucks each I said. Well that went good for Pat and not for me. After all was said and everything done Pat cleared 110.00 after our 40.00 investment. This was all fun and games. Then someone else cooked at the Rock and Brews Rock themed restaurant. Not only did she pay for lunch she paid almost for all the gas that went into the truck. She will be 67 years young tomorrow catching up with me. Daryk Campbell Sr Posted March 17 Posted March 17 Sunday evening I tried something new. The wife hinted that she wanted some Lo Mein, I said, I'll give it a shot. It turned out well. My noodles to homeade sauce was off but it still tasted fine. Just need to double the sauce next time. I cubed the chicken breasts ( I prefer dark meat, but the wjmife doesn't) coated them in lemon pepper seasoning. Let them sit 15 or 20 minutes on the counter (This is a tried and true portion for my house.) Then I made the noodles per the package, get the ones that are for LoMein, not rice noodles. Found a sauce recipe on line, I think its simple teriyaki sauce homemade. I cooked the chicken in a skillet with approx 3/4 cup of teriyaki sauce from a bottle. Cook it over med high heat to cook down the juice in the chicken and the sauce. I cooked some veggies in a separate skillet, as the wife and kids won't eat them.
