Duck fried rice (Mallard) and hot and sour soup. Cooking DYI is the best.

Enough to feed an army. Leftovers a plenty.

I really enjoy hot and sour soup, but have never tried to make it.  Care to share a recipe, and any tips?

             Daryk,

Thus is the one we used yesterday. Really easy and quick, very tasty. There are other recipes with more complex ingredients we will try in the future but trying this one you can't go wrong.

Air to Plate on the corn goose. Hunting a large farm pond south zone. Hoped for more ducks but other athn early flyers saw very few but the geeese consistently kept coming. the younger fellow likes to shoot them and I'll as well. the 2 other hunters weren't as interested but when it was all that came by they unloaded as well.Think we were 1 short of our dozen and 1 unlucky gh. we al cleaned our birds but I told the father son team that I would do something with their birds. Had about 20 breast total. If it had skin I dry brined for 3 days and smoked. No skin corn brine for 7 days and then made most to pastrami which is just corned goose smoked. Vacum sealed 4 breast with some spices and a little goose. The smoker picture os everything I smoked one day. Everything got vacum saeled and I delivered their share back to them. The corn goose I sous vided for 6 hours at 160 degrees. Cooked the vegtables separate.  goose tast just like beef ,texture is different and a bit tough. Cut it thin.IMG-2850.jpg69533480018--34283C67-179F-41E5-B2E0-D339BC88F50D.jpg69610765100--9C77EB2B-9F0F-4CF5-83A0-30D9E563FCB2.jpg

White bass scampi this afternoon. We did some catching last Sunday on Turnback creek feeding Stockton. Caught whites and a walleye fly fishing throwing clousers. We cleaned a few.

Then this morning there was foraging to be done. Picked a handful of morels and some wild asparagus. Bonus deer shed.IMG_20230406_142457007_HDR.jpg

Put together the meal of the scampi, sauteed morels and asparagus. Added baked tater. Easy and satisfying.
