As for the recipie, I like this style as it works better for grilled cheese being its not like the more traditional "runny" style. This style is where you can really run wide open with ideas. Excellent meal but they rushed the patrons to finish by the next sitting time. One of the instructors at Le Cordon Bleu had been a sous chef for him for about 10 years.
