First a picture from a night or two ago. Shrimp and rice with a golden cauliflower, carrot, and pea curry.

For tonight I have spatchcocked a chicken and seasoned it with Penzy's fajita seasoning and cumin. In the roasting pan I added waxy red and gold potatoes.

I have a side dish of sugar snaps and mushroom chunks ready to saute. The sauce for tonight will be my home made queso.

Living large here in the Ozarks.

Dump some pace picante into the can, eat while fishing, put empty can into bag, hopefully to throw way later instead of left to decompose.  even better if you remember  to bring a fork or spoon.

RPS, not gonna lie that looks good, cept for the curry flavor.  but it is tough to cook in the boat while fishing but it would be tasty cold too I bet.

I wish I understood curries better. There's a Thai restaurant close by that has a 'yellow curry' with chicken, carrots, potatoes, onions. It's greenish in color and pretty sure it's got coconut milk in it too. I love that stuff. Took a stab at it once with a jarred yellow curry paste, and it was a bust. Not even close.

I've never tasted curry anything. I am intrigued with it though.

Canned tamales are good if you add a can of mexi-corn and a can of chili then cover with shredded cheese.  Just remember to unwrap them before baking.

Order the Maharaja curry powder from Penzy's. Use it to spice a roux, then use coconut milk and chicken stock to make the sauce.
