rps Posted November 2, 2016 Posted November 2, 2016 First a picture from a night or two ago. Shrimp and rice with a golden cauliflower, carrot, and pea curry. For tonight I have spatchcocked a chicken and seasoned it with Penzy's fajita seasoning and cumin. In the roasting pan I added waxy red and gold potatoes. I have a side dish of sugar snaps and mushroom chunks ready to saute. The sauce for tonight will be my home made queso. Living large here in the Ozarks. ness Posted November 2, 2016 Author Posted November 2, 2016 I wish I understood curries better. There's a Thai restaurant close by that has a 'yellow curry' with chicken, carrots, potatoes, onions. It's greenish in color and pretty sure it's got coconut milk in it too. I love that stuff. Took a stab at it once with a jarred yellow curry paste, and it was a bust. Not even close. John

Terrierman Posted November 3, 2016 Posted November 3, 2016 Canned tamales are good if you add a can of mexi-corn and a can of chili then cover with shredded cheese. Just remember to unwrap them before baking.
