I am not a big fan of corn directly on the grill, though if it's wrapped in the shuck to keep it from drying out, I am in. the other way, good and charred to put into a salsa then I like it in direct contact. what can I say, I have been told many times, "you ain't quite right".

For dinner yesterday afternoon had this bacon and eggs. The bacon is really Asian flavored but the eggs fried in the fat did not seem to pick up the flavor, BilletHead approved ! Dang BilletHead, great minds think alike! I bought three bellies at Sam's Club a few weeks ago. I did a cure with Morton's Tender Quick and brown sugar for ten days. Sprinkled the bellies with onion powder, garlic powder and cracked black pepper last night. Smoked in two batches today, one for eight hours with pitmaster's choice powder (mixture of cherry, maple and hickory). The other batch was smoked with apple for ten and a half hours. They'll all rest in the fridge wrapped in saran wrap until Wednesday or Thursday to be sliced and packaged. I sliced some unsmoked bacon this morning to fry for an omelet and it was really good, can't wait to try it after the smoke! Gonna have around 30 lbs of bacon in the fridge, hope a pound or so makes it for BLT's next summer! WM MOPanfisher, ness, Mitch f and 4 others 7

MOPanfisher Posted December 1, 2016 Posted December 1, 2016 Back when we used to butcher hogs we cured the bacons and hams out, at first the bacon was possibly the saltiest thing I ever ate, but quickly learned to make it right, and had some of the most delicious bacon ever. Honestly never really considered just buying a belly, (face palm moment). I have a brand new, still in the box electric smoker sitting on my porch, hmmmmm.
