I don't use foil until the meat is done.  For instance 203 for a pork butt then wrap in foil, beach towel and put it in a cooler for at least an hour if not 2 -3 hours.

I've had them in the cooler for 4 hours and they were still in the 180 degree range.

If you use it to get the meat up to temp I feel that it holds in too much moisture and causes the meat to get that boiled meat taste.

You and your boiled meat ??I do get that though.

When I do ribs, I wrap them in foil to finish, then they come out and go under the broiler to dry out/crisp up and carmelize the sauce.

I know it's my dealio but it is what it is.  I just can't stand that smell or flavor.

Really insulted my mother in-law when I wouldn't eat her famous stew.  It was a real quiet dinner if you know what I mean.

There is no shame in using foil.

It is the crock pot of the barbecue world.

What if a guy uses foil and a crock pot for his BBQ? Heretic or trailblazer? ?

Hey, don't be slamming Dinty Moore, there have been a few times that is what was available and it wasn't bad at all.  Of course it might have been related to just how hungry I was at the time.  At least once hungry enough to eat it cold out of the can.

As for foil and crockpots, heck I will happily use both on occasion, if it makes it easier and still keeps the smoky bbq flavor I  would use pantyhose or sweat socks.  Foil, crock pot, non standard sauces, smoking during the dark of the moon it's all good.  I can't think of anything in life that I consider myself a purist on, maybe a snob on some things but that's different.  With one possible exception, in no universe does pineapple belong on a pizza, that is just wrong.

Nothing illegal about using foil. Ethical? Personal preference.

I just have a much greater sense of accomplishment if I do not foil.

Doesn't mean I haven't ever used foil.
