What fancy smancy micro brew did you have with this? Maybe paired it with a fine wine?

As long as it is served in a red solo cup I will let it slide this time. I also want to know if it was mixed in a water bottle "Shaken" or poured into the cup and "stirred" ?

If you get too hungry before payday I can supply something previously alive from the BilletHead freezer. Micro greens from the garden (lettuce). Got some chestnuts too that are beginning to sprout in the fridge crisper drawer. Canned goods in the pantry but sadly we are out of the O's

As of dinner on Weds, it turned out that we still had a few more crappie fillets. I had mentioned the crappie scampi to my wife and that I wanted it for my bday dinner. So she made the crappie with garlic, olive oil, s&p, little butter and when the crappie was cooked threw in the shrimp. This was the quickest part of the meal. Since she went and made a mushroom, chive, and asparagus risotto that took over 40 minutes to make and a few cups of chicken stock. She served the scampi and risotto with fresh asparagus. Afterwards, I got a slice of tempura fried cheesecake at a local sushi bar. No candles, but a nice finish to a nice day.

OK tonight is was pizza at a new place in town, Your Pie. They make personal pizzas in a brick oven. You select the sauce, cheese, veggies, and meats. Nice thin crust. They also have salads that you a can also customize with their toppings. Fresh gelato. Also craft beers and wine.

So my pizza was marinara sauce, shredded mozzarella, Italian sausage, meatball, black olives, and pepperoni. My betterhalf had ricotta cheese, pesto sauce, spinach, artichokes, sun dried tomatoes, and fresh mozzarella.

I had a Mother's 3 Blind Mice Brown Ale with my pizza.

Had my Betterhalf make some more of the fresh crappie. She followed a really easy baked fish dish. The fish is seasoned with s&p, little lemon juice, then coated with ranch dressing and parmesan cheese. Baked at 350 until flaky. Served with fresh broccoli.

With dishes this good, we really have to get back out and get some more crappie!

Earlier this week I got a hankering to make some chicken and rice. Didn't really know how I was going to do it but knew a crockpot would be involved.

So to skip a lot of useless info, I threw about 8 thighs in the crock and seasoned liberally with Cajun seasoning before heading out to work.

Now the rice is a bit of a different story. I almost messed that up! I decided I wanted cook it in chicken stock to boost the flavor. So I bring it up to a boil, set the timer and go watch some tv.

I start smelling it a few minutes later. It's really not registering just yet. I look at the timer I have with me and there is still 7 minutes to go.

I get up to look anyway and good thing I did. It's bone dry and scorching! I didn't lower the temp to simmer! I left it boiling!

I was able to save the bulk of it. I added some Cajun seasoning to it too. I thought I would never get the scorched rice out of the vessel, but I just let it soak in warm water for a bit and it slid right out! Lucky!

So we eat on this for a couple of days. Then I get to thinking, I have some chicken stock left over in the fridge, why not make some Cajun chicken and rice soup? So I did.

Woza!! That was the best!!! I'll skip the chicken and rice plate next time and go straight to the soup!

Im sorry I don't have any pics. Just memories!
