It has a higher smoke point than butter so you get a nice crispy bottom and edge while the yolk stays runny. The egg sets the minute you drop in the hot oil. If you want the yolk cooked more you just spoon hot oil over the top. I went just slightly too long on one of them but it was killer. I flipped the first one over so you can see the bottom. Everybody's got a favorite kind of egg. I like poached until the whites are set but the center is still very runny...a buttered piece of good toast with S&P. rps 1 John
