Like the sound of the mustard. I grabbed a recipe for mustard chicken off the web a while back, but have yet to try it. Here it is. I think it sounds great. Anything like yours?

          Yes Ness kind of along that line but no dry mustard just Dijon, no flour in the browning process and there is white wine involved. That would be in the cooking and not drinking :) . I tried to google up the rabbit version I used but there were no matches . There is however a bazillion other versions for the cute little creatures.  This one is pretty easy and really good. Like JohnsFolly said tree rat and I think about anything would work. I think If I used red meat like waterfowl or venison I would grill to rare to medium rare and do the sauce on the side and go from there,

I hope it's going to be epic.

Now I did cut into 1/4th's. The wife won't touch it because "it's red in the middle". Yeah ok, I'll eat it! But 10lbs at one time is just a bit more than I can eat at once. I'll freeze them until ready.

So I'll smoke them one at a time as I get the urge for them. I'll make some French dip sandwichs out of one of them for the wife. Which I really like too!

$2.93 that's a great price! I've had them for dim sum at a local Asian restaurant. Not bad but not the best eating experience. Flavor is fine its the texture that I didn't like.
