Johnsfolly Posted January 2, 2018 Posted January 2, 2018 To give homage to our German background (or at least PA Dutch), we cook pork and sauerkraut on New Year's day. We braised a pork butt in sauerkraut and a little chicken stock. Seasoned it with garlic powder, fennel and cumin seeds, and ground pepper. Braised it for three plus hours. Served it with mashed potatoes. When I was a kid the pork was knockwurst. Since I have been on my own after High school or with My Betterhalf, we have upgraded the pork. Our group has most switched to sparkling grape or raspberry, that way we can include all the young folks and it's tasty too. Nearly didn't happen last night though. Someone decided to set the bottles outside to cool down, at about 4 degrees. When we realized what had happened it was almost too late, we drank some slushy fizzy drinks a few minutes late. ness 1

Been there. My champagne was chilled outdoors, but I set a timer. John

But, it’ll also keep stuff from chilling if you’re starting from room temp. Unless you’ve got one of those one-way coolers. 😀 John
rps Posted January 2, 2018 Posted January 2, 2018 When the wife and I landed at XNA Dec 31st, we stopped at the Sams on the way home. I picked up a two bone pork chop as one of the purchases. Yesterday I "frenched" the chop. The chop spent 3 hours at 138 degrees in my new Anova. Then I seared it. I made a caper brown butter pan sauce for the chop and the baked potato.
