Definetly more manly than in a sandwich bag in hot, scratch that. Make that luke warm water. 

But the ultimate is with fire on a grill.

I love a good tartare.

Carpaccio is delicious. Live sushi, poke, pretty much boils down to raw food being delicious. 

I browned a small pork shoulder and three small chicken breasts in 1 inch cubes, made a sauce, and am 16 hours into a 24 hour sous vide chicken and pork adobo.

So my brother and I are looking into sharing a glass door front refrigerator with a fan. We are going full bore into dry aging beef 🥩. Once you’re hooked on dry aged beef, it’s hard to go back!

     Today,

    Bobotie. Pronounced boBOtie. One of the national dishes of South Africa. Essentially curry meatloaf casserole with baked egg. A curry-like. sweet, sour and savory.  A one pot meal but the curry part in the recipe is not blazing hot. It is a mild curry of which we could not find but assembled from various spices.  Pretty easy to make and really good. Had plain white rice with it but could see the meat mixture in a folded piece of flatbread or tortilla,

If I shot a second deer tartare was on the menu. Love carpaccio. In fact my Betterhalf and I shared Octopus carpaccio Thurs night. They did cook the octopus, bundled slices, then wrapped them to bind the pieces. Sliced wafer thin and served with a little olive oil, avacado and red onion. Was very good☺.
