The old basic way which is a pound of beans {pinto today), one ham hock, S&P and two medium onions. BilletHead Posted November 1, 2018 Posted November 1, 2018 A good day for this too, A couple of firsts for me. Homemade tortillas and white chili. Got the meat cooking and as it simmered it was making the broth for the soup. While this was going on I made the dough for the tortillas and separated it out. Let it rest for an hour. Picked the meat for the soup off the bones and worked up the veggie part of the soup. Got to pressing the dough and as I did pitched the previous flour disk into the cast iron skillet. Added the meat broth, more spices and meat into the pot, with lid ajar partially covered the pot to simmer. The tortillas besides the three I ate began to pile up. Chili had simmered up long enough time to try it, Tortilla too. Really good. I have some tweaking to do on the tortilla recipe and getting better at the press and desired thickness. This dough was flour, salt, baking powder, water and veg oil. Next batch I will use a fat like lard or better yet goose fat . Simple, delicious and warms the bones this time of year. I’ve got a ham bone with a bunch of meat on it in the freezer just waiting for that treatment. I’ve done corn before but they weren’t that good, and so not worth the trouble. Terrierman 1 John

We are so used to cookie cutter mass produced tortillas with all kinds of additives I am not sure what a homemade tortilla tastes like. Had two more this afternoon with another bowl of the white chili and thought they were better today. Oh and so you all know that was not chicken in the white chili .
