rps Posted July 9, 2015 Posted July 9, 2015 Ness: Really well done! Between you and me, we have given the world alternatives on navy beans. What I must ask is this: Why do most people not bother to pick one or the other? Neither is really difficult and both are vastly superior to any fast food. Sometimes I feel sad. ness 1
joeD Posted July 9, 2015 Posted July 9, 2015 You'll get over it. Quit using navy beans. And words like vastly superior. Can't help you with sadness though. A thorough regimen of drugs and alcohol might help. Mitch f 1

ness Posted July 11, 2015 Author Posted July 11, 2015 Sauerkraut out of the crock and into the jars. Flavor is outstanding. Chief Grey Bear and BilletHead 2 John
MOPanfisher Posted July 11, 2015 Posted July 11, 2015 Mmmmmmmm, I would eat it. But the word sauerkraut may be too hifalutin (who would have thought that hifalutin would make it past spell check?). I got to go get the brisket and chickens out of the smoker for tonight's late July 4th party. ness 1
Chief Grey Bear Posted July 11, 2015 Posted July 11, 2015 Your doing brisket at about $50 a pop and you call sauerkraut high faluting? MOPanfisher Posted July 11, 2015 Posted July 11, 2015 No just a hifalutin word don't want to make Joe feel uncomfortable. Besides I have no idea what the actual cost on these were they is home grown by a friend I just smokes them and coats em with a home made BBQ sauce. They are all stupidly tender right now awaiting consumption in a few hours. I may have already had my fill so a cold beer maybe two if my wife isn't watching, and sides may be my supper. rps 1
Chief Grey Bear Posted July 11, 2015 Posted July 11, 2015 Great cuts of meat. I smoked a ton of them until prices went through the roof. rps Posted July 11, 2015 Posted July 11, 2015 I have a birthday girl at the house today. Imma fixin' to start the meat and potatoes. After that, a pudding. I may even open a can of spinach to go with the food.
Mitch f Posted July 11, 2015 Posted July 11, 2015 Dry aging the beef is the bomb! Pan sear with an oven finish is the restaurant method of choice. How do you dry age...with cheese cloth? How many days? I've been watching a ton of videos on YouTube and there's everything from Cheese cloth to those Umai bags. "Honor is a man's gift to himself" Rob Roy McGregor
