I'm not good with it one bit! My wife demands I cook all flavor and moister out of her steak so she can rehydrate it in ranch dressing!

This kills me every time!! I have finally got to about medium. And she doesn't use ranch but in occasion anymore. 

But, next day, I've been known to add a puddle of A1 to dip a day old steak in.

I love this one!

2 TBS Oil

3 TBS CHILI SEASONING

2 TBS Flour

1 can Tomato sauce

1 1/2 c Chicken Broth

1 1/2 tsp cumin 

3/4 tsp each garlic powder onion powder

1/2 tsp salt

Heat oil, add chili seasoning and flour. Add tomato sauce and remaining ingredients. Mix well simmer 10-15 minutes.

Here’s one I like

Ingredients
6-8 dried guajillo chiles, seeds and stems removed
3 tablespoons flour
3 tablespoons vegetable oil
1 15 ounce can tomato sauce
1 teaspoon garlic power
1 teaspoon onion powder
2-1/2 cups chicken broth (made with Better Than Bouillon)
2 tablespoons raw sugar

Directions
1. Add chiles and 1 cup of broth to a blender. Blend until very fine. Strain through a fine sieve.
2. Add oil and flour to a pot and make a roux. Add chile mixture and remaining ingredients to pot and bring to a boil. Reduce heat and simmer 30 minutes.

            Depending on how easy or hard you want to make it. Last few we have tried used dried assorted chilies. Roast and rehydrate. Make a mole which can get complicated but well worth it.  On a few of the dishes we have made there always seems to be extra sauce.  We use that sauce to coat tortillas, fill with meat and cheese. Layer in a sheet pan more sauce and cheese and bake. Everyone we liked but cannot say we have found a favorite. Looking for a green or red sauce?

Easier sauce 

Ingredients
3 tablespoons vegetable oil
3 tablespoons flour
3 tablespoons chili powder
2 cups chicken broth
15 ounce can tomato sauce
1 t oregano
1 t onion powder
1 t garlic powder
1 tablespoon raw sugar

Directions
1. Make roux, add chicken broth and all spices. Bring to a boil and cook until thickened.
2. Add tomato sauce and sugar. Simmer 10 minutes.

Thanks.  I’m going to see what kind of chili peppers are available around here.  Chili powder always seems kind of bland.  Some talked about craft chili powders too.  might look on amazon prime. 

Figure I would make a big batch.

No, it's going to be very dry. It will look like there is no way it's going to work. 

But once you add the sauce, it smooths right out.

You really can’t screw up smoked bologna. 

Unless you put it in an insta pot.
